I have been seeing cinnamon roll recipes all over social media lately. And while I LOVE cinnamon rolls, I am not sure that I will ever actually bake them myself. I am all about no easy desserts and cinnamon rolls seem taxing. But, these Raw Vegan Cinnamon Rolls (no bake) are a good alternative.
These no bake cinnamon rolls are super easy to make. All you need is a blender, a bowl and your freezer. Since you don't have to turn your oven on they are perfect for summer. Plus these rolls are pretty healthy, filled with fiber and healthy fats with just a touch of sweetener.
I love a good no bake dessert. For another yummy no bake dessert try my no bake tahini date bars.

- dates
- coconut oil
- water
- cinnamon
Substitutions

How do I make a copycat erewhon raw cinnamon roll?
- In a bowl, mix together your dough ingredients until fully combined.
- Roll out the dough into a rectangle shape on parchment paper, it should be about 3 inches wide.
- Put dough in the freezer while you make your filling.
- Blend together filling ingredients until smooth in a high powered blender or processor. I stopped to scrape down the sides a few times.
- Spread filling on flattened dough. Carefully roll into a log. Freeze for 30 minutes.
- Remove from freezer and carefully slice into your cinnamon rolls, each roll being about ½ an inch thick.
- Store in the fridge or freezer.
Storage instructions
The extra cinnamon rolls can be stored in a sealed container in your fridge for up to 5 days. They can also be frozen.
Recipe pro-tips
Take your time when rolling up these cinnamon rolls, otherwise they will mush together.

I used coconut flour instead of oat since I'm a sucker for coconut and they're fantastic!

hi...! 🙂 hoping to make these soon! for the oat flour... would oats finely ground in a coffee grinder work? ...or is there another flour or blend that I could sub in for it? thank you!
Kristi says
hi! Yes if you finely grind the oats yourself that will work just fine. Just make sure they are not instant oats.

Great recipe! I saw a similar recipe on TikTok and had to try - I think next time I’d like to add chopped pecans to the filling for a bit more differentiation in texture, but overall these are an easy and filling snack for when you’re craving something sweet.

These are a hit! I was hesitant to make these at first but I’ve heard so much about the Erewhon version that I had to try them (I don’t like anywhere near an Erewhon). I can’t stop eating them and my friends all loved them so much. Ive made them twice in two days! Only thing is I used a mixed nut butter instead of plain cashew butter and it gives them a more dark color and deeper flavour. Thanks for the recipe!

Love these no bake cinnamon rolls! They’re easy to make! And they’re delicious! Made these today for the second time! The first time, I had to sub the cashew butter, because I didn’t have any! I used almond butter and it was yummy too! This time, I used cashew butter!
