This loaded vegan sandwich with hummus and cucumber is a delicious sandwich recipe.


  • 1/2 cucumber - thinly sliced
  • 1 avocado - sliced
  • 2 thin slices of tomato
  • mustard
  • 1 piece lettuce of choice
  • 3-4 tbsp hummus
  • 2 slices of toasted sourdough (or any bread you like)


  1. Spread hummus and mustard on your bread. Top bread with tomato, cucumber, avocado and lettuce. Cut in half and dig in.
