Substitutions

- Egg - a flax egg works great here and keeps the recipe vegan.
- Oat flour - all purpose flour should work well.
Instructions
Cook mushrooms and onions.
Mix together mushroom mixture with lentils.
Form burgers and bake.
Add your favorite toppings and dig in.
Storage instructions
Store the extra veggie burgers in an airtight container in your fridge or freezer. These burgers will keep for 3-4 days in your fridge or up to 3 months in your freezer.

Lentil Mushroom Veggie Burgers
Ingredients
- 1 egg or 1 flax egg 1 tablespoon ground flax + 2 ½ tablespoon water
- 1 onion finely chopped
- 3 cloves garlic - minced
- ~3 cups mushrooms finely chopped.
- 1 tablespoon balsamic
- 1 tablespoon soy sauce or liquid aminos
- ½ teaspoon smoked paprika
- salt/pepper to taste I used about ½ teaspoon of each
- ½ teaspoon cumin
- ½ teaspoon chili powder
- 1 cup cilantro or parsley finely chopped
- 1 tablespoon olive oil
- 2 cups cooked brown or green lentils
- ½ cup oat flour
- ½ cup oats
Instructions
- Preheat oven to 400 degrees.
- Make your flax egg by mixing flax and water, let sit refrigerated for 10-30 minutes.
- Heat oil in a skillet over medium heat. Add onions and garlic and cook for 5 minutes. Add mushrooms, cilantro, spices, soy sauce and balsamic and cook or 5 more minutes.
- Combine cooked lentils with mushrooms, onions, flour, oats, egg, salt/pepper, and olive oil.
- Form burgers 5-6 evenly sized burgers out of about ½ cup or one small handful of mixture on a lined sheet pan. The dough is pretty sticky so I recommend working with wet hands.
- Bake burgers for 30-35 minutes on a lined or greased sheet pan.
- Serve with a toasted bun and toppings of choice.

This recipe was my first "bean burger," and it is delicious! The seasonings are definitely the reason the flavor is so good. I formed nine patties, maybe because I had more lentils (2/3 cup dry, cooked until soft) or more mushrooms (really fine chop before measuring), or because I didn't really measure while forming the patties. Ate two, though, so still serves four. Husband raved how good they tasted. 👍
