Recently at my favorite restaurant in ATX I had Jalapeño falafels and since then I have been obsessed with creating them. I decided to put my own twist on the recipe and use white beans instead and they came out SO good. These Jalapeño Lime White Bean Falafels are a delicious twist on your standard falafel recipe.
These falafels are perfect to eat as is, with your favorite dip, in a salad or in a sandwich or wrap. Honestly the possibilities are endless. I ate mine in a wrap with some hummus, arugula, beets and feta and it came out SO good. This is the type of recipe that is a crowd pleaser for carnivores and veg heads alike.
White beans are one of my favorite vegetarian protein sources. For more yummy white bean recipes try my crispy white beans or my Mediterranean white bean wrap.
