This Healthy Single Serve Chocolate Chip Cookie (vegan) will be your new favorite cookie recipe.


  • 3 tbsp almond butter (another thick nut butter should work)
  • 3 tbsp coconut sugar
  • 1 tbsp milk
  • 1/8 tsp baking soda
  • 1/8 tsp vanilla
  • 3 tbsp oat flour
  • 3-4 tbsp chocolate chips (add more or less to your preference)


  1. Preheat oven to 350 degrees.
  2. Add all ingredients except for chocolate chips to a small bowl. Mix until just combined. Lastly fold in your chocolate chips.
  3. Form a cookie on a lined sheet pan. Bake for 15-20 minutes, until the edges have started to brown. The cookie will seem a little un done but will firm up while cooling.


This makes 1 cookie
