These Crispy Baked Sweet Potato Wedges with Vegan Garlic Aioli are perfect for a sweet potato lover. The key to getting these fries crispy is arrowroot or cornstarch. The vegan aioli is cashew butter based and so good.

Sweet Potato Wedges
- 1 large sweet potato - cut into wedges
- 1 tbsp oil of choice
- 1 tsp salt
- 1 tsp black pepper
- ½ tsp paprika
- 1 ½ tbsp arrowroot starch or cornstarch
Garlic Aioli
- ⅓ cup cashew butter (try to find raw without any added oils but any is fine)
- ¼ cup water
- 1 garlic clove - minced
- 1 tbsp lemon juice
- 1 tbsp apple cider vinegar
- ¼ cup chives
- 1 tsp miso (omit and add more salt if you can't find this)
- pinch salt
- pinch black pepper
Instructions
- Preheat oven to 425 degrees.
- Add sweet potatoes to a bowl and coat with mix with oil, spices and starch until evenly coated.
- Add wedges to a sheet pan lined with parchment paper. Bake for 35 minutes.
- While your sweet potatoes are cooking, make your aioli. Add all aioli ingredients to a bowl and mix until completely combined.
- Let sweet potato wedges cool, and then dip in aioli and enjoy!
