    Crispy Sweet Potato Wedges with Vegan Garlic Aioli

    Which do you prefer, sweet potato fries or regular fries? I have always been a sucker for sweet potato fries. These Crispy Baked Sweet Potato Wedges with Vegan Garlic Aioli are perfect for a sweet potato lover. The key to getting these fries crispy is arrowroot or cornstarch. The vegan aioli is cashew butter based and so good.

    • sweet potato
    • oil
    • salt/pepper
    • paprika
    • arrowroot starch
    • garlic
    • chives
    • cashew butter
    • water
    • lemon juice
    • apple cider vinegar
    • miso

    How do I make crispy sweet potato wedges?

    1. Cut sweet potato into wedges and coat with spices and starch.
    2. Roast sweet potato wedges until crisp.
    3. Mix together garlic aioli ingredients in a bowl until fully combined.
    4. Let fries cool and dip in sauce!

    Ingredients

    Sweet Potato Wedges

    • 1 large sweet potato - cut into wedges
    • 1 tbsp oil of choice
    • 1 tsp salt
    • 1 tsp black pepper
    • ½ tsp paprika
    • 1 ½ tbsp arrowroot starch or cornstarch

    Garlic Aioli

    • ⅓ cup cashew butter (try to find raw without any added oils but any is fine)
    • ¼ cup water
    • 1 garlic clove - minced
    • 1 tbsp lemon juice
    • 1 tbsp apple cider vinegar
    • ¼ cup chives
    • 1 tsp miso (omit and add more salt if you can't find this)
    • pinch salt
    • pinch black pepper

    Instructions

    1. Preheat oven to 425 degrees.
    2. Add sweet potatoes to a bowl and coat with mix with oil, spices and starch until evenly coated.
    3. Add wedges to a sheet pan lined with parchment paper. Bake for 35 minutes.
    4. While your sweet potatoes are cooking, make your aioli. Add all aioli ingredients to a bowl and mix until completely combined.
    5. Let sweet potato wedges cool, and then dip in aioli and enjoy!
