These crispy baked smashed carrots are a delicious way to enjoy carrots.



This makes 2-4 servings of carrots

  • 6 small or 3 large/medium carrots - cut into 3/4 inch long pieces
  • 2 tbsp oil
  • 1 teaspoon salt (adjust to your preference)
  • pepper to taste
  • pinch red pepper flakes
  • 1 tsp garlic powder


  1. Add carrots to boiling water. Boil for 15-18 minutes until softened.
  2. Preheat oven to 425 degrees.
  3. Add carrots to a sheet pan lined with parchment paper. Using the bottom of a jar or glass, smashed each piece of carrot. Coat carrots in oil and seasonings.
  4. Bake carrots for 30-35 minutes, until crisp. Let cool and dig in.
