Crispy baked and smashed beets

These Crispy Baked Smashed Beets are a delicious veggie side recipe.


  • 1 bunch beets - sliced into ~1/4 inch thick rounds
  • ~1 tablespoon oil
  • 1/2-1 teaspoon salt
  • pinch black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder


  1. Preheat oven to 425 degrees.
  2. Add beets to boiling water. Boil for 10-15 minutes, until the beets are fork tender and can easily be smashed.
  3. Add beets to a sheet pan lined with parchment paper. Make sure to pat off any excess water.
  4. Coat beets in oil, salt, pepper, paprika and garlic powder.
  5. Bake beets for 30-40 minutes, until they are cooked through and crisped.
  6. Serve beets with your favorite sauce or protein.


This makes 2-3 servings of beets
